It’s Valentine’s Day Weekend! Whether you celebrate with a special someone or show a little self love, here is a very “simply” romantic recipe to make it a delicious experience. I’m a huge foodie so there is always lots of recipes flooding my social media timeline (because we know that algorithms give you more of what you watch). I love to re-create the ones I like the best. This one was a hit in our home!
This recipe is inspired by one of my favorite foodie influencers, Jenni Häyrinen | Food artist who launched National Uunifetapasta Day in Finland and who’s original recipe kicked off a viral social media phenomenon using #Uunifetapasta. I also follow the amazing Samira Kazan, who did a spin on the original recipe using mushrooms instead of tomatoes, and that is the version I am re-creating. Ingredients:
- Mushrooms
- Olive Oil
- Feta
- Herbs (I used Rosemary & Italian Seasonings)
- Garlic
- Onion (I like Red)
- Your favorite Greens (I used baby spinach).
Into your favorite pasta dish add mushrooms, olive oil, onions, garlic, herbs and block of feta (Add a little olive oil on top, or a lot cause that’s your business, as Tabitha Brown says). Bake in the oven at 385F for 20 minutes. Remove from oven and fold in your favorite greens and add your favorite pasta and enjoy!
